Amanda Theodosia Jones was an American inventor, poet, author, businesswoman, and Spiritualist. She is best known for developing the Jones Process, a vacuum method of canning devised in 1872 and covered by a series of patents the following year. The process preserved fruits and vegetables without extensive cooking and became the basis of the Woman's Canning and Preserving Company, which Jones founded in Chicago in 1890 as a business operated primarily by women. She also developed an oil burner, valves, and other mechanical devices, and later published technical writing on the use of liquid fuel.
